Pistachio Crusted Fish
Inspiration: Gockek, Turkey
Pick some local white fish filets. Drizzle it in olive oil & fresh squeeze lemon. Crush pistachios to cover the filets. Optionally add two slices of jalapeno to each filet for a kick. Add two slices of lemon to each slice to balance.
Grill to perfection.
Mazorca Corn
Inspiration: Cali, Colombia
Hunt down some local fresh corn on the cob. Husks on, put in on the grill. When half way done, pull off the husks and put back on the grill, rotating every few minutes. In the meantime, melt high quality butter. Slather the corn with butter, optionally drizzle with grated parmigiano cheese, and enjoy.
Spicy Crab Paccheri
Inspiration: the Med, Italy
Lots of garlic chopped any way you like, always the place to start, in a large pan with olive oil. Add peperoncino to taste. When the garlic is translucent, add a can of San Marzano tomatoes, dash of salt, perhaps more spice. When the paccheri goes into the water to cook, add fresh crab meat to the sauce and stir. Add the pasta to the pan with a cup of the pasta water. Stir and optionally decorate with parsley.
Crispy BBQ Steah
Inspiration: Southampton
Pick up a piece of your favorite steak - for the grill ours is Flank.
Chop 2 large shallots and 1 green serano pepper. Squeeze half an orange on the steak then drizzle with olive oil. Toss the meat in the vegetables, sea salt and black pepper to taste. Put on the grill and await perfection!
Scallops al Ajillo
Inspiration: Madrid, Spain
Select fresh, ideally local scallops. For a dozen scallops, roughly chop 1 head of garlic & 1 hot red pepper. Put the scallops into a bowl with the ingredients, sea salt and olive oil. Stir, then let sit at room temp for an hour+. When ready, cook on the grill, 3 minutes a side. Take the extra olive oil, garlic, pepper mixture and cook in a small pan on the side and use to drizzle or dip.
Cilantro Crusted Fish
Inspiration: California
Choose a fresh, local white fish like fluke or sole. Squeeze 1/2 a lemon on the filets and sprinkle with salt. Finely chop 1-2 bushes of cilantro and spread across the fish. Place on the grill until cooked or bake in the oven.
